North African Fish Stew
This is a very easily prepared dish that tastes fantastic.
Ingredients
- 2 tablespoons olive oil
- 1 teaspoon
cumin seeds
- 1 cinnamon stick
- 1 onion,
chopped up
- 1 chilli, chopped
up
- 2 cloves
of garlic, chopped up
- 2 teaspoons grated fresh ginger
- ½ teaspoon ground turmeric
- ½ teaspoon ground coriander
- 200g chickpeas
- 300g fresh
tomatoes, chopped up
- 500g/1lb 2oz white fish fillets (e.g. cod or
snapper) cut into chunks
- 2 teaspoons honey
Preparation method
- First cook the chickpeas. Drain excess water and set aside.
- Heat
up the olive oil in a sauce pan. Add the cumin seeds and cinnamon stick and fry till they begin to crackle.
- Throw
in the chopped onion and cook until it is browned. Then add the garlic, chilli and ginger and the ground turmeric and coriander. Cook for another one minute.
- Add the chopped tomatoes and water and cook for ten minutes.
- Add
the fish and simmer until the fish is almost cooked
through and tender.
- Add
the chickpeas and honey and cook for a further 2-3 minutes.
- Spoon out into bowls and serve with crusty bread. Optionally, you may garnish the stew with either fresh coriander leaves or a slice of lemon (or both), and serve with couscous.
